Responsibilities:
Pasta Preparation: The Pasta Chef is responsible for preparing the pasta dough from scratch or using pre-made pasta. They mix and knead ingredients, roll out the dough, and cut it into various pasta shapes such as spaghetti, fettuccine, ravioli, or tortellini. They ensure the pasta is cooked to the right consistency and texture.

Sauce and Toppings: The Pasta Chef creates a variety of sauces to complement the pasta dishes. They prepare traditional Italian sauces like marinara, Bolognese, Alfredo, pesto, and carbonara. Additionally, they may create unique and innovative sauces to add flavor and appeal to the dishes. They also select and prepare toppings such as fresh vegetables, herbs, meats, or seafood to enhance the pasta dishes.

Cooking and Assembly: The Pasta Chef cooks the pasta dishes according to specific recipes or customer preferences. They boil the pasta until al dente (firm to the bite) and ensure it is properly drained. They then combine the cooked pasta with the selected sauce, toppings, and seasonings. Production work is from 7am to 10am, seven days a week. We’re looking for two team members that can work 3 or 4 days a week.

You may choose your area of responsibility, but you'll be needed in other areas as production requires. Duties:
1. Baking scratch buttermilk biscuits.
2. Cooking sausage.
3. Slicing deli meats & cheeses.
4. Assembling sandwiches. (Everyone helps.)
5. Packaging sandwiches. (Everyone helps.)
6. Cleaning. (Everyone helps.)

ABOUT US:
Jim & Peggy’s is food manufacturing company. We make pre-packaged sandwiches, and our target market are convenience store owners who can’t provide their own food service.

Our product line is small. We have two sausage biscuits (spicy and regular) and two sub sandwiches. We bake our own scratch biscuits, but we outsource our bread to a nearby bakery.

Our kitchen is in Fort Worth, but we’ll be servicing Haltom City through deliveries. We’re currently in production trial runs, our last step before launch, which was set for no later than March 31.

Unfortunately, one of our three owners had a medical emergency and will require surgery, recovery, and physical therapy. He’s benched for an indefinite but lengthy amount of time. We’re down to two and cannot launch without additional help.

We open for business once we achieve reasonable kitchen efficiency. Our goals are achievable. Our dreams are big.

EMPLOYEE PERKS:
Adding an employee this early on is not something we planned for, so we can't offer any of the good perks we dream about. But we can offer food! With the addition of some cheap ingredients, the heel ends of our cheeses and deli meats would make an excellent mac and cheese!

To Provide culinary, product and restaurant expertise and resources to all Ventura customers.

Major Duties and Responsibilities:

Provide Culinary Team of Chefs with support and assistance with all culinary efforts:

Organize and mise en place product cutting tastings product testing, events and meetings.
Organizes and supports customer culinary demonstrations and ideations.
Support and collaborate with chefs with all customer and Ventura culinary needs.
In conjunction with L&D, Marketing and Culinary - support the development of the Ventura Toolbox and Ventura Tech:

Provide expertise to support Culinary L&D curriculum development.
Provide all mise en place for training events including: planning, execution, and completion.
Recipe and food inspirations support of Ventura and Customer Branded product as well as Recipe and menu support of Ventura website and "Ready to Go"/Exclusive Products:

Brings a deep understanding of menu strategy, including food costs, consumer value and utilization of ingredients, to ensure strategic fit for customer recipes and concepts.
Conducts menu research and develops on-trend culinary concepts, prototypes, recipes, and finished products suitable for our customer’s applications and operations.
Partner with Marketing and sales for new product introductions.
Provides recipe development, food styling, video creation, photoshoots, etc.
Culinary support for events and shows requiring culinary execution, presentation and showings:

Event coordination with Sales, Marketing and Venues.
Menu and recipe development for event.
Responsible for managing all aspects of the menu and food.
Manage the upkeep and schedule of the Ventura Culinary Facilities: Kitchen Manager:

Keeping the pantry stocked with fresh ingredients.
Upkeep and maintenance of kitchen equipment.
All kitchen certifications are up tp date and protocols are followed.
Maintain kitchen schedule.
Customer and Ventura Branded product development: (RTG and Exclusive Products):

Produce gold standards and formula direction to chefs and R&D Developers.
Assist in ingredient and supplier search for flavor ingredients.
Preparation of bench samples.
Analytical testing of bench samples and ingredients.
Package and ship samples per Ventura protocols.
Education and Experience:
Required:

Culinary degree or equivalent experience.
1-3 years food service operation and/or menu and product development experience.
Experience with commercial kitchen tools and kitchen fundamentals.
Experience with basic video recording, and post- production editing steps.
Preferred:

Food service Operations, Product and Menu development, Manufacturing experience.
Certified Research Chef (CRC) or Certified Culinary Scientist (CCS).
Current ServSafe Certification.
Knowledge and Skills:
Mastery of culinary skills.
Excellent Palate.
Social Media Savvy.
Proven ability to style food in photography and video.
Self-starter and the ability to anticipate the next steps.
Ability to work independently and in a team.
Ability to roll up your sleeves and do whatever needs to be done.
