Crunchy Mama Farms is a regenerative family farm in Alvord, Texas. We specialize in teaching butchery classes, taking the students through the entire process, from a live animal in the field to various preservation techniques. The 'Be the Butcher' program focuses on using as much of this precious resource as possible. We are looking for a farm-to-table chef who can prepare meals during the class from the cuts the students learn.

Friday night's dinner will utilize the fresh liver, heart and hanger steak. Many people have never eaten liver and heart and we want to introduce them to this nutritious organ meat. In the past, we have done tacos, but are open to suggestions.

What we have done in the past for Saturday's lunch and dinner:
Hog Harvest - Pork chops and Pulled pork
Beef Butchery - Hamburgers and Beef stew

Sunday doesn't necessarily need a chef as long as sides can be made on Saturday.
Hog Harvest - Students cook up the fresh sausages they make so they can test out the flavor profiles before packaging, so we would just like some gluten free biscuits made to accompany the sausage.
Beef Butchery - Shawn will be making brisket overnight so we would just need some sides to go with it.

Our kitchen is gluten free, but substitutions are easy to make. We will provide all of the ingredients from the list the chef provides. Our butchery students sometimes like to ask questions to the chef on how best to prepare a cut of meat or use a certain technique so a personable chef is a plus.

The current dates we are needing a chef for are:
November 10-11th (see note about Sunday) -- Hog Harvest Class
November 17-18th (see note about Sunday) -- Beef Butchery Class
