Airline Lounge Management company is looking for a Full-time Culinary Manager. The Culinary Manager will work within established corporate policies and procedures to achieve customer satisfaction, company standards of quality, safety, and cost control through quality customer service, communication. The Culinary Manager will be directly responsible for implementing and following the culinary standards and overseeing the culinary operations of the lounge. Responsible for supervising all kitchen functions including food purchasing, preparation and maintenance of quality standards; sanitation and cleanliness.
Ideal candidates will possess:
Five years of previous Culinary Management experience and/or related Food and Beverage and hospitality experience
Ability to create and standardize menus and recipes for multiple complimentary airline lounge buffet services, including airline specific menus.
Oversees the preparation and presentation of food and beverage service for multiple locations
Ability to create signature food and drink menus
Create and standardize servicewares for lounges
Help with kitchen design, including equipment and serviceware acquisitions, vendor setups
Create standards for BOH service, kitchen safety, kitchen training, and innovations.
Execution of Daily Food Service, Quality, Technique, Portion, Presentation and Food Cost Control
Track food costs while Managing Vendors to provide Standard Cost-efficient Products
Estimate Food Consumption and Requisition of Food Purchase
Standardize Production Recipes to ensure consistent quality
Plans and directs Culinary staff for Company or Customer events
Manages the activities of up to 50 team members
Preparation and presentation of food and drinks, and adherence to quality and safety standards
Motivate and maintain positive team morale through recognition and positive reinforcement
Address complaints and resolve local customer and team member challenges
Accurately complete and monitor local licenses and certificates, inventory, and audit reports to ensure corporate compliance
Research and resolve service issues requested by the customers
Responsible for the station invoicing and accounting for the clubroom sales
Good work ethic
Previous experience working in Microsoft EXCEL
Minimum 21 years of age
TIPS certified or willingness to complete certification courses
