We do not have a freezer in our kitchen, and we make everything from scratch, using only products that are never frozen. We are doing this all from a custom made, converted 40’ international cargo container. The cooking equipment includes two Baker’s Pride 351 pizza ovens stacked that cook at 650°, a 50lb double basket deep fryer, and a 36” oven, that has a 24” flat top, and two burners all running on natural gas. We have a Turbo Air pizza prep table, an 80qt. Hobart mixer, a Hobart HS8-1 heavy duty manual slicer with the removable knife tool, we have two 54” commercial refrigerators, one small mini-frig (for fish), and one beverage refrigerator. The kitchen must have our ovens turned on by 9am for them to be ready to cook pizzas by 11a, as those stones take some time to heat up. We open 11a and close at 8p, closed on Sundays. I need someone that understands all aspects of this business, from POS, to ordering, vendors, recipes, specials, costs, pricing, staffing, hiring, and knows how to produce really good quality food as quickly as possible.
