The Vaquero Club, an upscale golf club located in the private gated community of Vaquero in Westlake is looking for a Cook II. Vaquero’s Cook II, a member of the professional culinary staff, will prepare food to the exact chef’s specifications and set up stations for menu. Duties will consist of assisting the executive and sous chef with their daily tasks. Cook II will play a key role in contributing to our member and guest satisfaction and department goals.

Essential Functions
• Sets up and stocks stations with all necessary supplies
• Prepares food for service (e.g. chopping vegetables, butchering meat, or preparing sauces)
• Cooks food and prepares top-quality menu items in cooperation with the kitchen staff
• Answers, reports, and follows executive or sous chef’s instructions
• Cleans up station and takes care of leftover food
• Operates kitchen equipment safety and responsibly
• Stocks inventory appropriately
• Ensures that food comes out simultaneously, in high quality and in a timely fashion
• Prepares food in accordance with current applicable federal, state and corporate standards, guidelines and regulations to ensure high-quality food service is provided
• Ensures the proper sanitation and cleanliness of surfaces and storage containers
• Maintains a positive and professional approach with coworkers and members
• Other duties as assigned

• High School diploma or equivalent
• Minimum of 2 years culinary experience
• Proven cooking experience, including experience as a line chef, restaurant cook or prep cook
• Excellent understanding of various cooking methods, ingredients, equipment and procedures
• Accuracy and speed in executing assigned tasks
• Ability to work under pressure in a fast-paced kitchen
• Familiar with industry’s best practices
• Culinary school diploma
• Valid Food Handler’s Permit or ability to obtain certification within 30 days of hire
• Dependability and passion a must
Work Environment/Physical Requirements
• Must have physical strength and stamina to work extended periods as needed
• Must be able to stand for extended periods of time
• Must be able to lift 40 lbs.

Position Overview:

This position is responsible for assisting the Director of Operations at Will Rogers Memorial Center ensuring the highest quality food and beverage offerings while maintaining a safe and clean work environment for all employees.

Primary Responsibilities:

· Assists with schedules and coordinates the work of all cooks and other kitchen employees.

· Assists the Director of Operations in the planning and writing of all menus.

· Establishes and trains kitchen personnel in food production principles and practices.

· Establish standards for food preparation with an emphasis on quality.

· Assist in communicating with the Director and Catering Lead on all costs associated with BEO’s.

· Schedule kitchen employees in conjunction with projected event requirements and budgetary constraints.

· Establish maintenance schedules in conjunction with manufacturer’s instructions for all equipment, provides safety training in lifting, carrying, hazardous material control, chemical control, first aid and CPR.

· Maintain appropriate inventory with updated costs as invoices are received.

· Ensures timely input of invoices into system

· Perform a monthly inventory of all items at the end of each period.

· Implement and enforce sanitary practices for food handling, general cleanliness and maintenance of kitchen and/or dining areas.

· Ensure compliance with all applicable health and safety regulations.

· Plan and price menus.

· Perform other duties as assigned.

Required Qualifications:

· High volume Banquet and Fine Dining experience

· Excellent leadership and team development skills

· Must be able to work a flexible schedule; both weekends and holidays

· Must be ServSafe and HACCP certified.

Preferred Qualifications:

· Degree from postsecondary culinary arts training program· Experience with P&L and budgeting processes

Additional Requirements:

Position Overview The Prep/Grill Cook is responsible for ensuring that timely, safe, food is produced using the current recipe and guest request for a quality result.

Essential Job Functions The Grill Cook must have knowledge of food preparation techniques and be able to produce hot and cold food items using current approved recipes meeting exacting standards. This includes but is not limited to handling food products from a raw state through the cooking and preparation process to the final plating, for service and or display. The Prep/Grill Cook is responsible for following and enforcing food safety and sanitation practices to ensure all food is handled in accordance with local health department and Craft Culinary Concepts policies. This includes but is not limited to being responsible for proper use of cooking utensils and equipment, storage, labeling and dating of food products as well as ensuring clean and sanitized working areas. The Prep/Grill Cook will have to work with a variety of teammates with varying degrees of skill and knowledge of high-volume kitchen production and must be able to partner with individuals to obtain successful results. This includes but is not limited to cleaning kitchen areas during and after events, leaving them in a ready state for future use.


Must be at least 16 years old
Must have a valid County Food Handler Card on file with Craft Culinary Concepts and in your possession for each shift worked
Must be able to perform mathematical equations as they relate to recipes.
Must be able to understand and follow specific instructions for recipes
Must have a H.S Diploma or equivalent
Must complete all pre-employment forms, and successfully pass a background check.
Must be able to work with a group as well as independently
Must be able to work in a fast-paced high stress environment

Other Skills/Abilities
